Onion Recipes
Walla Walla Sweet Onion and Watermelon Salsa
2 C watermelon, seeded & chopped
3/4 C Walla Walla sweet onion
3/4 C canned black beans, drained & rinsed
1/4 C jalapeno or Hungarian hot wax peppers, minced
1/4 C fresh cilantro or parsley, chopped
Juice of 1/2 lime
1/2 tsp salt
Mix all ingredients together in a bowl. Chill for at least 1 hour before serving.
Bistro-style Mashed Potatoes & Onions
2 Walla Walla sweet onions, sliced
2 pounds red potatoes
2 cloves garlic, minced
5 Tbs butter
1 C Parmesan cheese, grated
2 C Ricotta cheese
1/2 C cream
4 Tbs olive oil
Salt & pepper
Paprika to garnish
Preheat oven to 400. Saute onions in olive oil until caramelized, about 20 minutes. Boil potatoes in their skins until done. Drain and set aside. Melt butter and add minced garlic. Combine potatoes, onions, cheeses, cream and garlic mixture and mash. Transfer to greased baking dish or individual ramekins and bake until golden and bubbling, 15 to 20 minutes
