About Cilantro:
Cilantro is a wonderful herb that is commonly used in Mexican style cooking. Store in a plastic bag in the fridge for about 1 week. Cilantro is most commonly used in salsa. It is great chopped up and used as a topping for tacos, burritos and enchaladas. It is great fresh. Cooking or processing as for pesto renders it's flavor more mild. |
Cilantro Pesto:
1 bunch cilantro
1 Tbs sunflower seeds
1 Tbs minced garlic
1 Tbs grated Parmesan cheese
Combine garlic and sunflower seeds in a food processor. Grind. Add cilantro and cheese. Grind. Drizzle olive oil into pesto while food processor is running to form a smooth paste. Serve over pasta.
